After making cracklings, the fat left in the pan is a great healthy cooking fat. Many of us at SGFM are somewhat addicted to chicken “cracklings.” You can’t just eat one--nor should you try! A Slanker Omega-3 Chicken has an Omega-6 to Omega-3 ratio of 1.5:1. That's real brain food compared to Pastured Poultry with its 8:1 ratio and Free Range poultry ranges from 16:1 to 20:1. To prepare, mix slices of skin with generous coverings of seasoning (Butt Rub or Garlic Real Salt are good) and spread out evenly on a sheet pan or steel skillet. Roast in a 350°F oven until crispy, 40 to 60 minutes. Turn cracklings occasionally to cook evenly.
