Beef Stroganoff

A great healthy twist to a fantastic German meal.

Ingredients

1 pound grass-fed ground beef 90/10 or a grass-fed flank steak
2 Tbsp. macadamia nut oil
1 white medium onion chopped
8 oz mushrooms sliced
12 oz cream of mushroom soup (recipe below)
½ tsp paprika
½ tsp T-Coons The Stuff Seasoning
½ tsp garlic powder
½ cup Greek yogurt no sugar
4 cups cauliflower rice, or spaghetti squash, or zucchini spirals

Preparation

1. Cook meat over medium heat in large sauce pan till done. (Flank steak cut into small pieces when cooked to your temperature.)
2. Add all seasonings and cream of mushroom soup and mushrooms
3. Add yogurt and mix together until hot over medium-low heat.

Serve over cauliflower rice or spaghetti squash or zucchini spiral

Cream of mushroom soup
3 Tbsp. macadamia nut oil
¼ cup finely chopped mushrooms
3 Tbsp. coconut flour
¾ cup beef broth
½ cup unsweetened plain coconut milk
Salt and pepper to taste

1. Sauté mushrooms in oil till soft and golden
2. Add coconut flour and whisk till flour starts to turn brown
3. Add broth and milk while whisking and simmer
4. Simmer till thickened. Add salt and pepper to taste
5. This makes 10 to 12 ounces equivalent to one can of soup
